SLF Sweet n' Savory Meatloaf

When you think back on your childhood you can probably call to mind one or two recipes that were family staples. This is one that frequents my memories of family meals where the food was both tasty and comforting. Now that I have a family of my own, I understand why my Mom made it often. It’s easy, filling and everyone likes it!

Whether you whip it together for a quick meal, or make ahead of time to slide in the oven, you can stash this one in your back pocket under your “go-to” meals.

Ingredients:

  1. 1.5lbs of SLF Ground Beef

  2. 1/2 cup Brown Sugar

  3. 2 Beaten Eggs

  4. 1/2 Red Onion chopped

  5. 3/4 cup Oatmeal

  6. 1/2 cup Ketchup (+ more for spreading)

  7. 3/4 Cup Milk

  8. 1/4 tsp. each of the following: Salt, Pepper, Ground Ginger

Grease the bottom of a loaf pan. Word to the wise, use butter! Press brown sugar over the bottom of pan and then squirt and spread ketchup (use the extra ketchup for spreading) over sugar.

Mix remaining ingredients with the thawed ground beef. Shape the meat mixture over the brown sugar in the loaf pan.

Squirt a thin layer of ketchup over the top of loaf, spread, then top with a light crumble of brown sugar.

Bake for 1 hour at 350 degrees or until the middle is no longer pink and the edges are a little crispy. Enjoy!

Make ahead: prep in the morning, cover and place uncooked meatloaf in the fridge. Pop in the oven an hour before supper.

Leftovers: Eat warm or cold the next day. Or, for lunch on the go, make meatloaf sandwiches on hoagie buns (similar to meatball sandwiches)!
